(24day) Chicken with Brussels Sprouts and Mustard Sauce

Ingredients:

Cooking spray or canola oil 
2 tablespoons whole-grain Dijon mustard
12 ounces Brussels sprouts
2 Chicken Breast 
pinch of minced Garlic
pinch of Salt and Pepper
Dried Parsley 
8oz button mushrooms (optional)

Directions

In a non stick skillet spray cooking spray or pour in oil on medium heat
cut the chicken into strips and add to the skillet once it is warmed
While that is cooking, rinse off the brussels sprouts and mushrooms 
When you notice the chicken is no longer "pink" add the rest of the ingredients to the skillet
mixing occasionally 

Once the Chicken and Brussels Sprouts have browned lower the heat to a simmer for about 3 minutes and your ready to serve.

(24day) Mom's Salsa Recipe

Ever since our first 24 Day Challenge, we needed to add something ANYTHING to our foods because our taste buds weren't accustomed to fresh foods as they are now, so this salsa came in handy and its amazingly good to have in a big jar for anytime or any meal..well at least if you enjoy Mexican food as much as we do! 


I saved this because I knew it would come in handy!  

Ingredients:

Cilantro, handful
2 Tomatos
4 Green Chives
Depending on how spicy you want this, a few dried chiltepin's 
Tomato Sauce, I use El Pato because Ben loves salsa extremely spicy
2 Garlic cloves or a pinch of minced garlic 
1 Lime 
pinch of Salt
oh and a Blender

Directions:
Cut produce at a decent size, does not have to be small, but don't cut too large either, throw it in the blender but dont turn it on yet! throw in all the other ingredients, then you may turn the blender on. 


Finished product! I put it into the jar so that it lasts longer and stays fresh.

Ralph's Meal (24 Day Challenge)

This evening I made dinner twice, and was pleased to do so as we had a guest this evening! Our friend, Ralph who is doing big things with Advocare and whom is currently on a cleanse, so I had to think fast and prepare something he may eat and actually enjoy without feeling any ounce of jealousy towards the meal I prepared for Ben and myself.

This is for 1 serving, and by the way this was the first time he has tried sweet potato and he really liked it! woohoo!

Chicken
Ingredients:
2 chicken breast
Salt and Pepper
Garlic Salt
Paprika
Pyrex Pan

Directions:
Preheat oven to 400 degrees.  Place chicken inside the pyrex pan and season, cover with aluminum and place in the oven and bake for 45 minutes.



Sweet Potato slices
Ingredients:
1 Sweet potato
Small non stick pan
Canola Oil cooking spray

Directions:
First cut off both ends and discard, you may peel it if you choose however I left the skin. I then cut it in quarters for cutting convenience and then cut very thin slices

half way through slicing, turn stove on medium heat and spray the pan, when finished slicing place the slices flat inside the pan and cook until both sides are browned and toasted, lay them on paper towel when done.

Summer Squash Sauteed 
Ingredients:
1 Summer Squash
Salt and Pepper
pinch of Minced Onion or fresh diced onion 
pinch of Dill Weed
none stick pan with lid

Same with the sweet potato, cut off both ends and discard. cut into quarters and begin slicing (the thinner the slices the faster it will cook) spray pan with cooking spray, on low to medium heat throw the slices in and cook for about 10 minutes mixing occasionally, add the seasonings and cover allow that to cook mixing occasionally for another 10 minutes

(24day) Sweet Potato Salad

I am still a little unfamiliar with sweet potatoes but am loving them. I was bored and didn't want to make a casserole because it simply takes too long, so I got creative and fixed this up as a side dish.

Ingredients:
3 Sweet potatoes or yams
Fresh or dried Parsley
Cilantro
Fresh or Dried Mint
Minced Garlic
Salt and Pepper

Directions:

Fill a large pot half way of water and turn on medium to high heat, begin chopping the sweet potato into cubes and add to the water cover and bring to a boil. cook for 15-20minutes or until tender

Once they are done, drain them into a strainer and transfer to a large bowl. Add your other ingredients, mix and your done!


(24day) Quinoa (KEEN-wah) Taco Salad

I have not even finished eating my bowl of this deliciousness I wanted to post this asap because everyone in the world of Advocare NEEDS to try this one for sure! (if you haven't already of course..)

The only thing you really need to cook for this is the Quinoa, how awesome!
VEGETARIAN-prepare ground meat substitute I like to use Lightlife Brand which can be found at Safeway, Sprouts, and Whole Foods

Ingredients:

1 cup of Quinoa
2 cups of water or chicken broth (I just used water)
1 tablespoon taco seasoning (I did not have any)

Boiling Quinoa
Ground Turkey


While that cooks chop up the salad ingredients

Salad ingredients:

Lettuce
Tomato
Avocado
Lime
Salsa
Cilantro

Directions:
Rinse Quinoa under cold water and drain. Pour into a sauce pan, add water or broth and taco seasoning. Cover and bring to a boil, reduce to a simmer and cook on low for 15 minutes or until you notice the liquid has absorbed.

When ready to serve, scoop the quinoa into bowl and top with the salad.


Since I am not on the cleanse, I added a dollop of natural sour cream, and 2 crushed up tortilla chips
